Fun In the Sun!

So what does a foodie do after a day of traveling to Mexico?  EAT and maybe a little drink? Of course!! After landing we ventured to our hotel only to find this little place called Taco Break! A welcomed break it was indeed. Started with a Margarita on the rocks and the most delicious tower of salsas and homemade tortilla chips. Five degrees of spice starting with Tomatillo, to Chipolte, to Serrano and then some crazy hot combo. Also a bean dip and a pickled vegetable Giardiniere on top... definitely a yummy way to wake up the taste buds. Tacos, quesadillas, burritos, tostadas... too many choices.... prepared simply on a grill. I choose the Alambre pictured, which was similar to the fajitas served at home prepared with mushrooms, fresh bell peppers, onions and bacon of all ingredients. I chose the chicken variety which was of course covered in queso and was sooo good!

 

Next day was rise and shine to a breakfast buffet.. way too many choices as you can see! Serving tables full of fruit, hot entrees, omelette stations, taco bar, cold cuts, sushi and Asian choices, sweets and pastries... like I said too many choices!

 

Sunday Pizza in Mexico?

Of course! A wonderful combination of prosciutto, onion, mushrooms, artichoke hearts and cheese on a crispy thin crust... heaven! It reminded me of the New York style pizzas I ate growing up too ... foldable and delicious!



Lunch with a View

So who wouldn't want to eat and drink with this view? What a way to spend your day ... on a lounge chair being waited on? Especially when it involves Mojitos and an Italian Panini to share with my hubby.. garnished with a touch of jicama slaw.



Dinner and a Sunset!


Such an amazing meal and view! Why can't I eat every meal this way? The meal started and ended not only with a wonderful view, but awesome flavors and presentation. Talk about meal appeal... even the bread basket was accompanied with Garlic Parmesan and Spinach Artichoke Butters! My Red Snapper with Mustard Seed Coulis over Wild Rice was perfectly seasoned. My husband commented that his Braised Short Ribs rivaled mine from the holidays. Our dessert a wonderful layering of strawberry and banana custard exquisitely presented!
Needless to say.. our first couple days of food? .. Amazing!!
