Roasted Maple and Brown Sugar Acorn Squash

Yield: 2 servings

Ingredients:

  • 1 Acorn squash

  • 1 cup water

  • Olive oil

  • Kosher salt & pepper

  • 2 teaspoons butter, cubed

  • 2 tablespoons brown sugar

  • 2 tablespoons pure maple syrup

Equipment needed:

  • Cutting board

  • Serrated knife

  • Soup spoon

  • 5 x 7-inch baking pan (larger for more squash)

  • Liquid measuring cup

  • Paring knife

  • Measuring spoons

  • Tongs

Fall screams Squash!! I love acorn squash sweetened with maple syrup and brown sugar! Perfect side dish for grilled pork and salmon with a little heat and sweet. My hubby loves acorn squash made this way!! This recipe is for two, but double or triple for your family’s needs. Easy recipe to put in the oven while you prepare your entrée.

Preheat oven to 375 F.

This recipe takes about 10 minutes to put together and then the oven does the rest! Cutting the squash can be tricky... be careful! Cut the squash in half by placing a sharp serrated knife in the center of the veggie and pressing around until the squash splits in half. Using a soup spoon, scoop out the seeds and stringy fibers until relatively clean.

A bit of moisture will help the squash cook quickly and keep it moist. Place the cut squash upside down in a baking pan, 7 x 5 or 13 x 9-inch pan depending on amount preparing. Pour in about 1 1⁄2 - 2 cups of water in the pan to submerge about 1⁄2 -inch of squash in liquid. Using a paring knife, make small slits piercing the squash skin. Bake in preheated 375 F oven for 40 minutes.

After squash has baked, a knife can easily be pierced into the squash. Using a pair of tongs, carefully flip halves over and carefully drain water. Drizzle liberally with olive oil. Sprinkle a bit of kosher salt and pepper over each half. Place half of butter, brown sugar and maple syrup into each half. Place back in oven and roast for another 15 minutes or until butter & sugar melts. Spoon melted, buttery yumminess over squash and bake for another 10 minutes.

This squash is the best!! So good with pork or salmon. I love to grill salmon with a bit of seasoning and brown sugar... Perfect combination with the slightly sweet squash! Dinner is going to be amazing and you didn’t really have to do much to prepare it. Add another vegetable to balance out the meal... ENJOY!!!
