Ginger Balsamic Roasted Sprouts with Pecans

Serves 4

Ingredients:

  • 1 ½ pounds fresh Brussel sprouts

  • 2 tablespoons olive oil

  • 3 tablespoons butter, melted

  • 1 ½ tablespoons balsamic vinegar

  • 1 teaspoon kosher salt

  • 1 teaspoons ground ginger

  • 1/4 cup brown sugar

  • 1/8 teaspoon black pepper

  • 1/2 cup chopped pecans

Equipment needed:

  • Cutting board

  • Paring knife

  • Measuring spoons

  • Dry measuring cups

  • Small bowl

  • Small wire whisk or fork

  • Half sheet pan

  • Bent edged spatula

  • Optional: Parchment paper

I love Brussel sprouts! Roasted are the best too… Crispy texture with savory flavors make a delicious side dish. Pretty simple preparation for even the novice cook. Can be made ahead too…toss and roast when your ready!

Time to measure out the ingredients and start the sauce prep:

** Preheat oven to 375 F.

1)    In a small bowl, measure olive oil and place butter. Microwave for ~25 seconds or until butter is just melted.

2)    Add balsamic vinegar, salt, ginger, brown sugar and pepper. Whisk well to blend.

Brussel sprout prep:

3)    Trim off the stem of each sprout slightly and remove tough outer leaves that fall. Cut each sprout in half.

4)    Place sprouts on half sheet pan or cookie sheet with sides. Drizzle with sauce and sprinkle pecans over top. Toss to coat well with fingers or flip several times with a bent edged spatula to blend.

It’s roasting time:

5)    If ready to roast… Place pan in center of preheated 375 F oven. If saving for later cooking, cover with foil or plastic wrap and refrigerate til cooking.

6)    Roast for 15 minutes. Using a bent edged spatula, lift and flip sprouts over. Place back in oven for another 15 minutes. Brussel sprouts should be slightly charred and bright green, not mushy.

*** Need oven space?? Brussel sprouts can be removed from oven a bit early and then broiled for 3-5 minutes just prior to serving to heat and brown too!

Dinner’s ready!!

Your roasted Brussel sprouts are ready… and smell wonderful! Slightly sweet and savory… with pecans that give the dish the perfect crunch. Remember, meal appeal is size & shape, color, temperature, texture & of course flavor too… This dish is a win-win!! Serve with your holiday bird or ham… or an every day dinner entree! Enjoy!!
