Creamy Sweet Onion and Parmesan Pasta

Easy, one pot recipe! Light cream sauce covered pasta is the perfect side dish or entrée. Cooked all together in one pot... Can’t get any easier! Eat it plain or with your favorite meat!

Creamy Sweet Onion and Parmesan Pasta

Yield: 6 side dish servings or 4 entrées

Ingredients:

  • 2 tablespoons olive oil

  • 1 medium/large Vidalia onion, sliced or diced

  • 2-3 cloves garlic, minced

  • 2 cups chicken broth

  • 1 cup low fat milk

  • 8 ounces pasta of choice

  • 1/2 tsp salt

  • 1/4 tsp white pepper

  • 1/2 cup white wine

  • 1 tablespoon cornstarch

  • 1/2 cup shredded parmesan cheese

  • 1/4 cup fresh parsley, chopped

  • Garnish: Shaved Parmesan cheese, fresh chopped parsley

Equipment needed:

  • Cutting board & chef knife

  • 3 -4 quart sauce pan/ pot

  • Rubber spatula

  • Liquid & dry measuring cups

  • Measuring spoons

I’m always looking for an easy side dish for a quick dinner meal. Grilling meat is fast, so why not the side dish? This pasta dish is just that! Simmered in one pot to absorb all the yummy flavor. Lower in fat too... but not flavor!! Grab your saucepan and dinner will be ready in minutes!!

The ultimate one pot meal! If you hate cleaning up after cooking, you will love this recipe! My hubby loves it because it tastes fantastic and he’s my clean up person... Less washing!! Begin by sautéing the onion and garlic over medium heat in the saucepan/ pot until softened, ~ 3 -4 minutes. Add chicken broth, milk, seasonings & pasta and bring to a boil, covered. Give it a stir, recover and allow to simmer for specified time for pasta, ~ 8-10 minutes depending on type.

Often pasta dishes use whipping cream or 1/2 & 1/2 to make the dish rich and creamy. I’ll teach you a trick that will give you the same results with much less fat! When your pasta is al dente or slightly chewy, stir the ingredients in the pot. Combine the cool wine and cornstarch, stir well with a fork or small whisk and pour into the pot. Stir and simmer until the pasta sauce thickens. The wine will also add nice flavor and the cornstarch will thicken the sauce. Sprinkle in the Parmesan Cheese and chopped parsley. Stir it up... Smell the wonderful aroma! Taste it and adjust the seasonings if desired.

Dinner is ready!! I love to serve this with grilled chicken breasts... or steak!! All by itself… It is the perfect “Meatless Meal” too!
