Tomato Cucumber and Mozzarella Salad

Perfect marinated summer salad using tomatoes, cucumbers, fresh veggies and mozzarella! Great ‘make a head’ Italian style side dish for your meal or BBQ. Super simple with no special preparation techniques needed. Gonna love it!! 

Tomato Cucumber and Mozzarella Salad

Serves 6-8

Ingredients:

  • 1-pound carton assorted cherry or grape tomatoes, halved

  • 1 English cucumber or 2 medium-sized, quartered and sliced ~1/4-inch

  • 1 cup diced sweet pepper, yellow or orange

  • 1/2 red onion, sliced thin & halved

  • 2 cloves garlic, minced

  • 15 pitted Greek Kalamata olives, sliced

  • 8-ounce container of small mozzarella balls or small, cubed chunks

  • 2 – 3 tablespoons fresh Italian parsley, minced

  • 2 – 3 tablespoons fresh basil, minced

  • 1/4 cup olive oil

  • 3 tablespoons red wine vinegar

  • 2 tablespoons balsamic vinegar

  • 1 teaspoon sugar

  • 1/2 teaspoon kosher salt

  • 1/4 teaspoon black pepper

  • 3/4 teaspoon dried oregano (or 1 tablespoon fresh)

 

Equipment needed:

  • Cutting board & chef knife

  • Large mixing or salad bowl

  • Liquid measuring cup & measuring spoons

  • Plastic wrap or lid for bowl

I love fresh salads with lots of veggies!  In the summer my garden produces a ton of healthy produce, so I’m always looking for yummy ways to use it. This Italian style salad is perfect for any meal… especially grilled BBQ or pasta! I served mine with lasagna for an easy, healthy dinner when company came over. Make it ahead to reduce the last-minute crazy preparation. Pretty versatile … add whatever vegetables you want and make it your own! Grab your cutting board & let’s chop!!

This recipe is sooo simple! If you can chop, slice and measure… you can make it! Prepare it at least an hour before you eat to allow all the flavors to meld into the vegetables. 

First step…

1)    Begin by washing all your fresh produce and allowing it to air dry.

2)    Grab the cutting board and a sharp chef knife and prep veggies according to the ingredient list above. All the different colors and shapes make for amazing meal appeal.

3)    Place all the fresh vegetables in a large bowl. Add the fresh herbs, seasonings, olive oil and vinegars. Stir well. 

4)    Cover and refrigerate for at least an hour.

5)    Before serving, taste and adjust the salt, pepper and vinegar if you’d like. I prefer mine a bit tarter… and usually add a splash of extra red wine vinegar.
