Easy Grilled Lemon Chicken

Easy Grilled Lemon Chicken

Yield: 4 servings

Ingredients:

  • 4 boneless, skinless chicken breasts

  • 1/4 cup olive oil

  • 2 tablespoons lemon juice, ~ 1 fresh lemon

  • 1 teaspoon dried thyme

  • 1/2 teaspoon dried oregano

  • 1 teaspoon kosher salt

  • 1 1/2 teaspoon garlic powder (or 3-4 minced cloves)

  • 1/2 teaspoon black pepper

  • 2 teaspoons fresh lemon zest (or 1 teaspoon dried zest)

Equipment needed:

  • Measuring spoons

  • Liquid measuring cup

  • Medium mixing bowl

  • Microplane or fine grater/zester

  • Citrus juicer

  • Grill or grill pan

Lemon chicken is one of my favorite ways to make chicken! Marinated for a few minutes in herbs & seasonings makes for the moistest chicken yet. I often put it together earlier in the day and refrigerate until dinner to really absorb the flavors… but 10-15 minutes works well too! I always have chicken in the freezer and the recipe uses all the staples I have in my kitchen, so no need to shop… which is also a plus. Grab your ingredients and let’s grill!!

 Here’s what you need to do…

1)    First, I usually trim the excess fat off the boneless chicken breasts. If you prefer dark meat, boneless thighs work well too. 

2)    Place all dried seasonings in a medium mixing bowl. Pour in the olive oil, lemon juice & lemon zest. Stir well.

3)    Place chicken breasts into marinade and flip to coat each piece well. Push them into bottom of the bowl to submerge into excess liquid.

4)    Turn chicken about every 5 minutes if cooking immediately. If using later in the day, cover with plastic wrap and refrigerate. Turn chicken a few times until ready to cook. 

 Time to grill!!

 Didn’t I say it was easy?? Preheat your grill for 5-10 minutes or if you’re cooking in the house, heat your grill pan or skillet.

5)    Place chicken on grill grates or mat. I use a copper mat to save my grill from being a mess to clean up. Grill for 6 minutes per side or until internal temperature is ~ 160 F. If using chicken thighs, cook to 165 F as meat is a bit denser and often takes a little longer to cook thoroughly.

Dinner is ready!! Serve with your favorite veggie or potato…Maybe even a salad or fresh garden tomatoes. Perfect healthy, plant based meal!! ENJOY!!
