Creamy Garlic Parmesan Chicken

Do you love chicken? Garlic? This recipe for you! Super simple dinner & ready in ~ 30 minutes with little effort! Great weekend meal… Serve over smashed potatoes for a delicious dinner!


Creamy Garlic Parmesan Chicken

Yield: 4 servings


Ingredients:

  • 4 boneless, skinless chicken breasts

  • 2 tablespoons olive oil

  • 2 tablespoons butter

  • 1 1/2 teaspoons garlic powder (or 4 cloves garlic, minced)

  • 1/2 teaspoon kosher salt

  • Few grinds fresh black pepper

  • 1 medium onion, diced

  • 3-4 cloves garlic, minced

  • 8 ounces sliced mushrooms

  • 2 cups spinach or kale, chopped

  • 2/3 cup dry white wine

  • 3 tablespoons flour

  • 1 teaspoon chicken soup base

  • 1 cup half & half or milk 

  • 1/2 teaspoon kosher salt

  • 1/3 cup Parmesan cheese

  • Fresh ground pepper

Garnish: Fresh Parmesan cheese and fresh parsley

 

Equipment needed:

  • Cutting board & chef knife

  • Measuring spoons 

  • Plastic wrap

  • Liquid measuring cup

  • 12-inch cast iron or oven safe skillet

  • Rubber spatula

  • Wire whisk

  • Tongs

This recipe is so easy it’s almost sinful! Also, so delicious! Garlic & parmesan in a creamy sauce makes for a glamorous meal elegant enough for guests or a family dinner.

Here’s what to do…

1) Grab a sheet of plastic wrap and place 4 butterflied or thin chicken breasts between the layers. Pound boneless chicken breasts to ~1” thick. Sprinkle with salt, pepper & a little garlic powder.

2) Heat a 12” skillet with 2 tbsp butter & 2 tbsp olive oil. Pan fry breasts for ~5 minutes a side … & golden. Remove from pan & cover.

To make the sauce… 

3) Whisk together 2/3 cup white wine, 3 tbsp flour & 1 tsp chicken soup base.

Time to add the veggies…

4) Place 1 diced onion, 3-4 minced cloves of garlic in skillet & sauté until fragrant, about 5 minutes. Add 8 ounces sliced mushrooms & continue to cook for ~ 5 minutes.

5) Pour sauce over veggie mixture & stir to thicken. Add 2 cups chopped greens, like spinach or kale. Cook until greens begin to wilt. 
6) Add 1 cup half & half or milk, 1/2 tsp salt, a few grinds of pepper. Stir together & bring to a simmer.

Using tongs, place chicken back into pan & nestle into sauce. Sprinkle Parmesan cheese on top and use tongs to blend with sauce. Cover & allow to simmer for ~ 5 minutes or place pan in 325 F oven for ~ 20 minutes or until serving. 

Serve Creamy Garlic Parmesan Chicken over smashed potatoes, risotto or pasta! Garnish with extra cheese and chopped fresh parsley.

** Make mashed potatoes or your choice of sides while you’re cooking the chicken & veggies. Dinner will be amazing!
